Colpetrone's Montefalco Sagrantino DOCG “Sacer” is produced with 100% Sagrantino grapes. After the manual harvest, the grapes are subjected to fermentation with maceration, at a controlled temperature of 24-28°C. After the alcoholic fermentation, the maceration continues at a temperature of 29°C. The wine is then transferred to French oak barriques, in contact with the fine lees: the malolactic fermentation will take place in barrique, with batonnage for a duration of 6 months. Forother 6 months the wine remains in wood after which the refinement in the bottle will continue.
