This white wine from Cantina Su'entu comes from local white grapes, sourced from vineyards facing northwest on sandy loin tereni located at an altitude of 200 m above sea level. The harvest takes place in the second ten days of August during the night, to preserve the grapes from the high daytime temperatures. Once the harvesting phase is completed, the grapes are refrigerated before pressing and macerated for 24/48 hours, in such a way as to facilitate the extraction of all the aromas of the grapes. Therefore, only the flowering must is used, cleaned in steel by static cold decantation for 48/72 hours and finally started alcoholic fermentation at a temperature of 13°C, to facilitate the formation of esters or white fruit aromas. The final stage of maturation requires a steel stop for 4 months, in contact with fine lees and with frequent batonnage.
Features of this Marmilla Bianco Su'aro
It has a straw yellow color with golden reflections and a very complex and intense scent of honey and yellow flowers. On the palate it is inviting, fresh and characterized by pleasant mineral notes.
