From pure Bovale grapes, this Sardinian red wine from Cantina Su'entu is born: the vineyards are exposed to the North-East on sandy, clayey free soils and at an altitude of 130 m above sea level. The bunches are harvested by hand during the early September harvest: the harvest takes place at night, to protect the grapes from high daytime temperatures. Alcoholic fermentation takes place with medium maceration for about 10 days, a phase in which the pomace and must are mixed together using soft reassemblies and delestages to obtain more limited tannins. Alcoholic fermentation takes place at 20-22°C to preserve fruity aromas, followed by malolactic steel fermentation at 18-20°C. The final stage of maturation requires a 5-month steel stop.
Characteristics of this Sardinian red
It has a deep ruby red color with purple highlights. Olfactory notes of cherry, wild blackberry and Mediterranean scrub emerge on the nose. On the palate it is pleasantly fresh, with iodized notes.

Try with Asian cuisine. Also excellent with baked calamari, hot fish appetizers, pulp salad, stewed fish. Serve at a temperature of 14-16°C.
