From the vinification in purity of grapes of the precious Lambrusco Sorbara vine. The origin of the vines falls within the Emilia-Romagna area, in the 5-hectare land in the Sorbara district, in the locality of Cristo, 200 meters from the banks of the Secchia river and 20 kilometers north of Modena; on sandy and fertile soil; the rows of Lambrusco di Sorbara are interspersed with rows of Lambrusco di Salamino di Santa Croce. The vinification involves the use of Lambrusco di Sorbara grapes, harvested manually between the end of September and the beginning of October, the are cryomacerated in small tanks at low temperatures for 2-3 days; after the alcoholic fermentation of about 10-15 days on decanted must, with selected yeasts and a temperature of 15-18°C, there follows the refermentation, of the long Charmat type, of 4-5 weeks at a controlled temperature of 13-15°C.
Characteristics of this Lambrusco di Sorbara Secco
This wine has a light ruby red color with cyclamen reflections and an abundant, powder-colored foam. The perfume on the nose gives floral hints of roses and violets, then fruity memories of strawberries and blood orange. The taste on the sip is balanced, fresh and pleasantly aromatic, with good persistence and slightly savory at the end.

A wine to pair with cold cuts or with first courses. Perfect with Rigatoni with Bolognese sauce. The optimal serving temperature is 12°C in a large glass.
