From 100% Chardonnay grapes to vinification. The grapes come from Le Marchesine di Biatta Giovanni & C. in the municipality of Passirano, in the province of Brescia. The harvest in the vineyard starts in September with the manual harvest in boxes of maximum 18 kg. The white vinification in pneumatic press with soft pressing of the whole grapes and separation of the 1st and 2nd fraction. After static and physical separation from the impurities of the must at low temperatures, the yeast is inoculated for fermentation in stainless steel tanks at controlled temperature. This is followed by decanting and lowering of the temperature to about 10ºC to avoid malolactic fermentation. Once the "tirage syrup" is added, which contains a maximum quantity of 18gr/lt of sugar to enhance the softness and "silkiness" of the wine, it is bottled, capped with the crown cap and laid down in the pile for foaming. The vinification ends with the aging in bottle for at least 36 months.

The appearance of the wine is straw yellow with golden reflections, with a very fine and persistent perlage. The nose expresses a beautiful olfactory profile, fascinating for suasiveness and whimsy of peach flowers, honey and hazelnut open to a fresh, soft, satisfying taste. The taste to the sip recalls the next until a finish of great elegance.
