This white wine of the Mandrarossa winery is cultivated on calcareous soils that have the characteristic white stone. As for all the Mandrarossa wines, the production area is located in the Menfi town in the Agrigento province at south-west of Sicily. There are used 100% Fiano Allevate grapes with the Terre Siciliane IGT denomination and the cultivation soil is calcareous. The profit is 70 quintals per hectare and the density is 4500 trees per hectare. They are all exposed at South, South-east and they are located at 150-300 meters above the sea level. It takes place the cryomaceration at 5-8°C and then it follows the fermentation in stainless steel tanks at 16°C. Then there is the aging period of 3 months in stainless steel tanks at 10°C. Finally there are three months of bottle aging.
Charateristics of this Fiano
It has a straw yellow color with thin but evident green reflections that remind the youth of this wine. The smell is intense and characterized by jasmine, basil, and grapefruit with light sensations of tomato’s leaves and fresh laurel. The taste is mineral and sapid with aromatic herbs aromas such as oregano and mint.

The Fiano of Mandrarossa can be matched with fresh cheeses, light starters based on fish, with roasted white meats and with rise salads. It can be aged up to 2 years. It has to be served in a high and wide wine glass at 14°C.
