This wine is made by 70% of Corvina and Corvinone and 30% of Rondinella and other local grapes. The vineyards are located at Jago and Crosara of Negrar on marl-calcareous and clay hills. These areas are characterized by short walls called “marogne”. These walls create terraces. The grape harvest is late and it follows the fermentation. After the destemming, at the end of February, the wine is mixed with the lees for another fermentation to extract the colors, the sugars and the aromas. The fermentation lasts 15-20 days which give soft tannins to the wine. There is a wood maceration in barrels both little and bigger. It lasts 12-18 months and finally 3 months in bottle.
Characteristics of the red wine Valpolicella Ripasso “Le Poiane”
It has an intense ruby red color. The smell is wide and winy with spicy, black pepper aromas which are complex and fine. The taste is dry, velvety and harmonic.
