The Bolla winery of Veneto produces this sensational red sweet wine Recioto Classico della Valpolicella. The origin of the Recioto word is uncertain, maybe it comes from the dialect “recie” (ears) which is used to call the most sugary part of the berry. Or maybe it comes from "racemus" that means bunch or from "recis" that in the ancient middle age latin indicated the hanged bunches. The Recioto of the Valpolicella has ancient origins dating back the 1883. It is made by 70% Corvina and Corvinone and 30% Rondinella grapes. The late grape harvest takes place at the half of October to accumulate more sugars. The cultivation area is in the Marano of Valpolicella hamlet where the terroir is perfect to cultivate withered grapes. It is more suitable to be wither for long time compared to the Amarone. The alcoholic fermentation is slow and it lasts one month whose 10-15 days are dedicated to the cold maceration to extract the color and the aromas.

This Recioto della Valpolicella wine has a velvety and intense ruby red color with purple reflections. It is sweet but acid, so it left a clean mouth and it has structure. It has a long persistence with cacao, vanilla, spices and wither grapes aromas.
