This sensational wine of the Bolla winery is made with delicate white grapes located on the Garda sides. These grapes are the 30% of Garganega, the Trebbiano Toscano for the 20%, Chardonnay for a 5%, the Tocai Friulano for the 15% and the Cortese for the 30%. All these grapes give aromas to this wine. These grapes are cultivated on ancient river glaciation that give a mineral taste to the wine. The grapes are picked at the end of September and after the pressing the 50% has a cold maceration for 12 hours. After the static decantation, the must ferments at 12-16°C with selected yeasts. The wine stays in steel up to January with the own yeast and without the malolactic fermentation.
