This wine is made of 90% of Garganega and 10% of Trebbiano di Soave grapes. This Soave Classico comes from historical hills with 25-30 years old vineyards and they are cultivated on volcanic soils rich of minerals. The Soave Classico Retrò of Bolla is a traditional wine from Veneto produced from grapes cultivated on steep slopes made of terraces of dry stones walls and the vines are cultivated with the pergola method with 15-20 buds for tree. The grape harvest takes place at the end of September and the beginning of October depending on the maturation period of the grapes. There is a soft pressing and it follows a cold maceration. There is a contact on the yeast until spring time and it is added a little percentage of ripen grapes to give a more complex aroma.
Characteristics of the white Soave Classico
It has a light straw yellow color with green reflections. The smell is delicate with a fresh fragrant flower aroma. The taste is rich with exotic fruits and acacia honey. It is harmonic, bodied, elegant and persistent.

It must be served cold in a tulip wine glass. It is ideal with pasta, delicate risottos, white meats and grilled fish. It must be served at the room temperature and a good oxygenation.
