The Valpolicella Classico Superiore DOC is a red wine produced from the winery Manara. Grapes used to produce it are Corvina 70%, Rondinella 20% e Molinara, Dindarella and various varieties 10% comes from ancient vineyards owned by winery Manara. Winemaking consists of a fermentation of 7-8 days in stainless steel vessels, then wine is moved in other stainless steel vessels for 18 months. Bottle aging lasts 6 months.
Characteristics of Valpolicella Classico Superiore wine
It displays a deep ruby almost garnet red, with a subtle orange vein, due to the long ageing. Intense bouquet, which merges spicy fruits, black cherry and raspberry notes. It’s a well-structured wine, full-bodied and robust in taste. It can be perfectly paired with white and red meat and aged cheeses.
