The white wine Damarino of the winery Donnafugata, is a wine that boasts the DOC certification. The overall blend has the vinification of Ansonica present in a prevalent form, blended with other autochthonous vines of the East Sicilian area. The grapes are reared using the espalier control method and the pruning is in spurred cordon. The average planting density is about 5.000 vines per hectare and the production reaches about 85 quintals per hectare. The medium-textured soil is mainly clay. The grapes for the vinification are subjected to soft crushing. The must then ferments at controlled temperature. Then the wine is put on the market after at least 2 months of aging in bottle.
