From 100% Carricante grape vinification. The production area is that of Eastern Sicily - north side of Etna. The vinification involves fermentation in steel, at a controlled temperature of 14°C. It is then partially aged in tanks and partially in French oak in second and third passage barriques for 10 months and then at least 7 months in bottle before being marketed.
