“Collio Malvasia” by Muzic is a wine that praises the denomination white wine DOC. It is produced in the area of Collio, where the prestigious Muzic winery operates. The vineyards are spread in the district of San Floriano del Collio, Località Uclanzi. It is composed by 100% Malvasia Istriana grapes, cultivated on hills soils characterized by marl and sands of Eocenic origin. The old plants, that are between 60 and 80 years old, are trained with traditional guyot method and produce 60 quintals per hectare. The manual harvest starts in the third decade of September. The wine making begins with the elimination of stalks and a period of maceration, managed at 15°C for 12 hours. Then the soft pressing and the purification of the must through static decanting. The alcoholic fermentation, that lasts 8-10 days, is managed through a continuous control of the temperature, that is set on 16-18°C. The aging “sur lie” is developed in steel containers and consists in continuous “bâtonnages” that last at least 3 months.
