For this wine of the Caldaro Winery from Trentino vinification happens in purity, by using Sauvignon grapes only. The vinification involves a first de-stemming in the company, then cold maceration at a controlled temperature of 10°C for 8-10 hours, followed by soft pressing, natural decantation, and fermentation at temperature controlled at 16-18°C, the maturation on the fine lees in steel tanks for 5 months. The vineyard is located in hilly areas of the municipality of Caldaro, benefits from an excellent exposure to the south and east between 350 and 450 meters above sea level. The soil is clayey and well-drained.
Characteristics of the Sauvignon DOC wine
Upon organoleptic examination this wine shows a very delicate pale straw yellow color. The scent on the nose is striking for its freshness. The notes of elderberry and gooseberry are marked, which combine with the sensations of exotic fruit. The taste is broad on the palate and rich in crunchy fruit that dissolves into the intense minerality that gradually opens to the mouth. The long persistence is a triumph of fruit.
