From the vinification in purity of Sauvignon Blanc grape variety. The origin is that of Giovo, Trentino. The vinification involves manual harvesting in the third decade of September, soft pressing in an inert atmosphere, static decantation of the must, fermentation at a controlled temperature in stainless steel tanks, 10% aged in oak barrels, aging on the lysis for about 4/5 months before bottling.
Characteristics of this Sauvignon Doc
Appearance, the wine has a straw yellow colour with green reflections. The scent has rich, very intense and sweet notes on the nose, of elderberry, peach and ripe fruit. The taste in the mouth is complex, rich and full with a savory and mineral taste, but with an excellent return of ripe fruit.
