This traditional Trentino wine represents the perfect union between the ancient local population and the life of the past: game, peasant tradition and life in the small villages of the area. It comes from pure vinification of Lagrein grapes, those in force with an age between 5 and 20 years, developing a yield that reaches 70 hectoliters of wine per hectare of vineyard. The farming method is the classic Trentino pergola one with Gujot backs. The provenance of this Lagrein vineyard, which is one of the three native vines of Alto Adige, is linked to the presence of "Teroldego" and "Syrah". Characteristic of the species are the dark red colour and fruity berry flavors that are coupled with spicy - resinous notes of chocolate, tobacco and undergrowth. The vinification requires the fermentation on the skins with maceration of 10 days at a controlled temperature of 28°C; malolactic fermentation and maturation for 6 months in steel tanks, 75hl wooden barrels and 15% in barrique. The vineyard is located in a hilly area with exposure from south to east and an altitude between 230 and 350 meters above sea level. The soil is calcareous, clayey and of medium strength.

Upon organoleptic examination, this red wine from the Trentino tradition shows a very intense and deep ruby red color. The perfume has a fruity aroma with hints of plum and blackberries, the scents of chocolate and coffee envelop the palate. The taste is full-bodied with powerful and well integrated tannins, a long and persistent finish.
Suggested food pairings while tasting this red wine from Trentino Alto Adige
This wine is terrific with both feather and fur game dishes. The pairing meats are strictly red and cooked on the grill or grilled. Excellent with aged cheese. It should be served at 18°C in a large Grand Ballon glass.
