A red wine characterized by great "delicacy"; a term often absent in the description of wines. But for this Schiava Gentile grape variety it represents the ideal description. The vinification in purity of Schiava grapes, a company vine aged between 20 and 50 years that still manages to reach a yield of 85 hectoliters of wine per hectare of vineyard. The training system is the classic Trentino pergola. As for the origin of the “Schiava” vineyard which has a long tradition in Trentino and was known as “Farnatzer” in the Middle Ages. Until a few decades ago, 80 percent of the area in South Tyrol was cultivated with Schiava. Meanwhile, that percentage has dropped to below 20 percent. However, the Schiava is still the most cultivated variety in the region. The vinification requires the fermentation on the skins with maceration of one week at a controlled temperature of 24°C; malolactic fermentation and aging of 4 months on the fine lees in steel tanks and concrete barrels. The vineyard is located in a hilly area with exposure from south to east and an altitude between 230 and 350 meters above sea level. The soil is calcareous, clayey and of medium texture.

The organoleptic appearance is bright ruby red, the fruity scent of cherry and raspberry, hints of bitter almond and great charm. The taste is savory and soft on the palate, easy to drink and much appreciated by women.

This Trentino wine is excellent to drink even between meals, it goes well with appetizers and typical Tyrolean cuisine, speck and cold cuts, but also with summer salads and fresh cheeses. It is served at a maximum temperature of 15°C.
