The Lantieri winery, a reference for the tradition of Franciacorta. It produces this sensational DOCG sparkling wine through the vinification of Chardonnay grapes for 80%, Pinot Noir grapes for 20%. The origin of the vineyards of Chardonnay falls within the company scope and involves the use of only grapes from vines of average age 18 years; the Pinot Noir vines of average age 14 years. The vinification involves the soft pressing of the grapes, fermentation in steel vats and in small oak barrels at a controlled temperature. After fermentation, the wine is kept in contact with yeasts through a bâtonnage operation. Subsequently, Franciacorta is prepared for the tirage with which it begins the refermentation in bottle and aging on lees for at least 30 months. The permanence in bottle in contact with yeasts extends for a period of not less than 30 months.
