From the skillful vinification in a blend of grapes from the vines of Chardonnay, Pinot Bianco and Pinot Nero blended. The origin of the grapes falls within the company areas and all the vines have an excellent exposure to the East and South/East. Harvest takes place by hand in crates between the second and fourth week of August. Vinification takes place in white, in a pneumatic press with separation of the first and second pressing. After 12 hours of decanting at 15 ° C, inoculation of selected yeasts for fermentation partly in stainless steel tanks at a controlled temperature and partly in small oak barrels. Malolactic fermentation and racking precede the assembly of the Cuvée which in spring, added the "tirage syrup", is bottled, capped with the crown cap and laid down in stacks for the second fermentation. The final refinement requires that the stacked bottles remain at least 24 months in the rooms of our cellars before the "remuage". Subsequently opened and dosed "Brut" they receive the mushroom cap and the cage. Finally, at least two months of further refinement take place.
Franciacorta Brut DOCG Mosnel’s features
White gold in color with a thin and velvety perlage. The scent has rich floral notes of elderberry and hawthorn giving delicate nuances to the freshness of the fruit, between Mediterranean citrus and white and yellow fruit. Notes of aromatic herbs and almonds. The taste has a joyful and well-proportioned sip between freshness and fruit with a persistent finish, which tends to be refined and harmonious.
