From the skillful vinification of the refined Blend composed of native grape varieties such as Chardonnay, Pinot Bianco and Pinot Nero. The origin falls within the company limits of the Monsel winery. In vineyards with East-South/East exposure which guarantees the best perception of the sun throughout the day. The harvest takes place manually, and the grapes are harvested in crates between the second and fourth week of August. Vinification takes place for all the white grapes, in a pneumatic press with separation of the first and second pressing. After 12 hours of decanting at 15° C, inoculation of selected BIO yeasts for fermentation partly in stainless steel tanks at a controlled temperature and partly in small oak barrels. This is followed by malolactic fermentation and racking that precede the assembly of the Cuvée which in spring, added to the "tirage syrup", is bottled, capped with the crown cap and laid down in stacks for the second fermentation. Maturation and subsequent refinement require that the stacked bottles remain at least 24 months in the underground cellars before remuage. Subsequently they are opened and dosed "Brut Nature" they receive the mushroom cap and the cage. At least two months of further refinement is required before placing this Franciacorta on the market.

In appearance, this fine Franciacorta has white gold tones with greenish hints to emphasize its freshness. The scent is characterized by the citrus note of cedar and grapefruit fades into the floral notes of hawthorn, honeysuckle and verbena with an iodized touch. The taste has a strong hint of fruit with the shades of white peach and gooseberry, and the airy breath of youth, which returns in a generous sip without smudging, taut and dynamic, with a lively and savory finish.

Excellent with italian Risotto alla Milanese and with the whole Lombard cuisine. Try it with important aperitifs. The optimal serving temperature is 6° C in a tall and tapered glass.
