From the vinification in purity of grapes of Chardonnay, Pinot Blanc, and Pinot Noir. The grapes come from the Franciacorta DOCG area. Inside the company Le Marchesine of Biatta Giovanni & C. in the Municipality of Passirano, in the province of Brescia. The harvest includes the entry into the vineyard with manual collection in boxes of maximum 18 kg. Grapes from our vineyards in Franciacorta. The vinification develops in white in pneumatic press with soft pressing of the grapes and use of the second fraction of all our vineyards. After static and physical separation from the impurities of the must at low temperatures, the yeast is inoculated for fermentation in stainless steel tanks at controlled temperature. This is followed by decanting and lowering of the temperature to about 10ºC to avoid malolactic fermentation. Once the "tirage syrup" has been added, it is bottled, capped with the crown cap and laid down in a pile for foaming. Finally, the wine is aged in bottle for a period of at least 18 months.
Characteristics of this Classic Method Sparkling Wine
To the appearance that is evident from the organoleptic examination, the wine has a brilliant straw yellow color, with a very fine and persistent perlage. The nose expresses fresh notes of citrus and ginger embellished with hints of bread crust and yeast. The taste in the mouth is clean, characterized by an excellent acidity and an unusual freshness. Long, closes on beautiful scents that recall the lemon, warmed by the sun.

A wine that is well suited to enhance a great aperitif, the Brut "Opera" de Le Marchesine is an excellent companion for rich appetizers based on fish. Try it with a classic Japanese tempura. The optimal serving temperature is 6ºC.
