This sparkling wine is the best one of the Company and it is made by early picked grapes to obtain an acid must which lately is expressed in its perfumes. The Cà Maiol Metodo Classico is made by 100% Trebbiano di Lugana grapes and it carries the year in exceptional grapes harvests. It has a characteristic aroma of bread crust which is remarked by a long period on yeast which lasts 36 months. The annual production is 55.000 bottles and it is commercialized after 3 years of union with the “liqueur d’expédition”, whose recipe is hidden by the Company. The prestigious Brut Lugana DOP has a proof of 12,5%.
Characteristics of the sparkling wine Metodo Classico Lugana DOC
It has an elegant, fine and light straw yellow color. There is a quality and little perlage. The perfume is simple but is reminds some William pears, marjoram, yeasts aromas with balsamic hints. The taste is fresh and soft, with a light salty and persistent end.

This wine is a meal wine but it is perfect with raw, fume, grilled or steamer fishes such as the salmon. It is perfect with all light summer courses. It is perfect with fresh cheeses or as appetizer. It has to be served at 10°C in Flûte wine glasses.
