This wine comes from the skillful vinification of 100% pure Nerello Mascalese grapes and with the classic origin in the DOC area of Castiglione di Sicilia in a protected company environment. Harvest takes place during the first week of September. Vinification involves de-stemming and soft pressing and subsequent cold maceration for about 24 hours. The fermentation takes place for 25% in small French oak barrels where the wine remains for 8 months on its own yeasts during which it carries out malolactic fermentation on some barriques; for the remaining part, fermentation takes place in steel at a controlled temperature of 17 ° C. Finally, the refinement which requires the wine to age 40 months on the lees. Subsequently another 12 months of aging in the bottle.
