From the pure vinification of 100% pure Nerello Mascalese grapes, rigorously reared and selected, within the company areas. The origin of the vines is that of the Castiglione di Sicilia estate, where the Cottanera di Sicilia company operates. Harvest takes place in the second ten days of October with the grapes at perfect ripeness. Vinification involves de-stemming and maceration in contact with the skins at a controlled temperature of 28 ° C for about 30 days. Fermentation takes place at a controlled temperature of 26-28 ° C with constant pumping over and punching down; malolactic fermentation in oak barrels. Refinement requires the wine to age 14-16 months in French oak barrels. With subsequent 18 months of bottle aging.
