From the pure vinification of Chardonnay grapes. The origin of the vineyards falls within the company areas which exposure is to the East-South/East. Harvest takes place by hand in crates between the second and fourth week of August. Vinification is in white in a pneumatic press with separation of the first and second pressing. After 12 hours of decantation at 15° C, inoculation of selected yeasts for fermentation partly in stainless steel tanks at controlled temperature, and partly in barrique. Malolactic fermentation and racking precede the assembly of the Cuvée which in spring, added to the "tirage syrup", is bottled, capped with the crown cap and laid down in stacks for the second fermentation. For maturation and refinement, the stacked bottles remain at least 36 months in the rooms of our cellars before "remuage". Subsequently opened and dosed "Brut" they receive the mushroom cap and the cage. Finally, at least three months of further refinement are necessary.
Franciacorta Brut Saten DOCG Mosnel’s features
The sparkling wine has a bright gold color with a dense and creamy perlage. The perfume has an enveloping aromatic profile, and the sweet notes of bergamot, jasmine and calicanthus blend with the fresh spiciness of star anise and white pepper, resting on a reassuring fruity theme of peach and lychee with a touch of sugared almond almond and butter brioche. The taste on the sip has a fine and rhythmic royal gait, and seduces the palate with the joyful alternation of mint and dried fruit, where a few flakes of salt are not missing to give a delicate persistence.

A sparkling wine excellent with aperitif. Perfect to enrich the occasions of conviviality. The optimal serving temperature is 6° C in a tall and tapered glass.
