This Franciacorta Brut DOCG of the Ferghettina winery from Lombardy is made with 95% Chardonnay and 5% of Pinot Nero grapes. The vineyards are cultivated at 250 meters above the sea level and the soil has a clay and limestone structure. They are cultivated with the Guyot method with a density of 5000 trees per hectare and there is a manual picking of the grapes at the second half of August. The grapes is pressed very softly with a pneumatic press. Once the grapes are pressed there is a selection of the must to keep the best to produce the Franciacorta. The alcoholic fermentation takes place in stainless steel tanks at 16-18°C. Every vineyard is cultivated separately until the different cuvee are tasted and blended together for the re-fermentation. The refinement on yeasts lasts 24 months.
