From the blend of fine Cabernet Sauvignon grapes for 30%, Cabernet Franc for 25% and Merlot grapes for 40% with the addition of a very small percentage of Barbera never exceeding 5%; this sensational and refined red wine is born. An elegant wine suitable to accompany the lavish meals in the company of friends. The grapes for its vinification come from two vineyards. The first in Capriolo, on the hill where the Winery is located, of an average age of 22 years and the second in Adro in Colzano of an average age of 15 years. The vinification after the harvest usually takes place in the third decade of September when the grapes reach perfect ripeness. After harvesting by hand and a careful selection, the grapes are destemmed and taken to vats where fermentation takes place at a controlled temperature. After the maceration of about three weeks, racking takes place and then aging in oak barrels and steel vats. In the following spring, after the malolactic fermentation, the wines are blended and then further refined in wood and steel.
