This Franciacorta of Ferghettina is made with 100% Chardonnay grapes. The vineyards are cultivated at 250 meters above the sea level and the soil is clay and limestone. The vines are cultivated with the Guyot method and the density is 5000 trees per hectare. The grape harvest takes place in the second half of August with a manual picking. The grapes are pressed very softly with a pneumatic press. There is a selection of the must and the alcoholic fermentation is made in stainless steel tanks at 16-18°C. The vineyards are vinified separately and assembled in the following spring after several tastings. Then it takes place the re-fermentation. The yeasts refinement lasts 36 months.
Characteristics of the Franciacorta of the Ferghettina winery
It has a bright straw yellow color with a fine and persistent perlage. The smell has grapefruit and custard aromas with some apple and white flowers hints. The taste is fine, silky, delicate and structured. It is also elegant with a persistent end.
