This Franciacorta Extra Brut is made with 80% Chardonnay and 20% Pinot Nero grapes. The vineyards are cultivated at 250 meters above the sea level and the soil is clay and limestone. The vines are cultivated with the Guyot method and the density is 5000 trees per hectare. The grape harvest takes place in the second half of August with a manual picking. The grapes are pressed very softly with a pneumatic press. There is a selection of the must and the alcoholic fermentation is made in stainless steel tanks at 16-18°C. The vineyards are vinified separately and assembled in the following spring after several tastings. Then it takes place the re-fermentation. The yeasts refinement lasts 72 months.

The Franciacorta DOCG extra Brut Ferghettina has a golden color with a fine and persistent perlage. The smell is wide, inviting with almond, vanilla and candied fruits aromas. The taste is rich, fresh and balanced between delicacy and persistence.
Suggested pairings with this Franciacorta Cantina Ferghettina
It is perfect with starters and fish, with crustaceans or fried ones. It is also very good with fried vegetables. It must be served in a high and tapered wine glass at 8°C.
