The vineyards are spread in the district of San Floriano del Collio, that includes Località Asci, Località Valerisce. It is composed by 100% Tocai Friulano grapes, cultivated on hills soils characterized by marl and sands of Eocenic origin. The plants, that are around 40 years old, are trained with traditional guyot method and produce 80 quintals per hectare. The manual harvest starts in the second decade of September. The wine making begins with the elimination of stalks and a period of maceration, managed at 15°C for 12 hours. Then the soft pressing and the purification of the must through static decanting. The alcoholic fermentation, that lasts 8-10 days, is managed through a continuous control of the temperature, that is set on 16-18°C. The aging “sur lie” is developed in steel containers and consists in continuous “bâtonnages” that last at least 4 months.
