This famous wine praises the denomination Brachetto d’ Acqui DOCG. It is produced with 100% Brachetto grapes. The wine-making starts with the alcoholic fermentation, managed at controlled temperature in inox tanks. 36-48 hours maceration on skins in order to extract some colour. The fermentation ends once reached 3% Vol. The foam formation in autoclave lasts some days, after that, the must is stabilized and cooled at -4°C, then it is filtered and bottled. The aging is developed in the bottle for some weeks. The typical dessert wine, one of the best in Italy for its elegance. Brachetto d’ Acqui produced by Braida e Giacomo Bologna is a wine that should be drunk young, as it expresses all the fragrances of the grapes, recalling rose and mature fruits. For its features, it represents the perfect pairing with desserts made with chocolate.
