Cassiano is a great blend composed by 42% Merlot, 35% Cabernet Franc, 8% Syrah, 6% Petit Verdot, 5% Cabernet Sauvignon and 4% Tempranillo. The vineyards are located in Seehof and Panholzerhof, with a south-east exposition. The lands touch 280 meters elevation and the soils are characterized by sands and clay. The grapes are treated separately. The spontaneous fermentation is managed in wood. The maceration process lasts 3 weeks in order to extract tannins.
