This very important label has the Pignoletto di Modena DOC denomination. It is a brut sparkling wine typical of the Emilia Romagna and it is able to transmit the energy of the Pignoletto: fruity, intense, multi-shaping, drinkable and innovating. The proof is 12% and it is made by Grechetto grapes. There is a soft pressing of the entire or raked off grapes, under temperature control and there are later added the selected yeasts. The re-fermentation takes place with the “cuve close” method at low temperature.
Characteristics of the Moden Blanc Brut Doc
The Modern Blanc Brut of the Chiarli winery has a clear straw yellow color, lightly aromatic and fruity with an abundant foam with a fine and resistant perlage. The taste is delicate, with fresh fruits aromas, very persistent in both the taste and the scent.
Suggested pairings with the great sparkling wine
It has to be served as appetizer, with starters or with not very flavored white meats. The fish courses are perfect if not very structured. It is perfect with row or steamed fish. It has to be served at 8°-10°C.
