Bocelli 1831 Prosecco DOC is a sparkling wine produced in Veneto mainly from Glera grapes, the symbolic grape variety of Prosecco, sometimes accompanied to a small extent by other authorised varieties. Production follows the Charmat (or Martinotti) method, which involves the second fermentation in an autoclave, a technique that allows the freshness and primary aromas of the grapes to be best preserved. After soft pressing of the grapes, the must ferments at a controlled temperature and is subsequently sparkling in pressure vessels, maintaining a fragrant, light and immediate style.
Characteristics of this Prosecco DOC
On organoleptic examination it appears with a light and bright straw yellow colour, accompanied by a fine and delicate perlage. On the nose it is fresh and aromatic, with floral notes reminiscent of wisteria and fruity notes of apple, citrus and sometimes melon or light honey. On the mouth it is balanced and harmonious, with a pleasant softness typical of the extra dry type, supported by a good freshness and a light almond finish, characteristic of Glera. The sip is smooth, lively and easy to drink, designed to be immediately pleasant.

This Prosecco wine is extremely versatile, ideal as an aperitif but also suitable for accompanying light dishes such as appetizers, finger food, salads, shellfish and delicate preparations. It can also be served throughout the meal, as long as there are dishes that are not too structured, thanks to its freshness and moderate alcohol content. The ideal service temperature is around 6–8 °C.
