Passito Fiano Puglia ZOE VESPA VIGNAIOLI

When sweetness, balance, and softness meet, Zoe comes to life, a pure Fiano grape passito dedicated to the Vespa family dog, from whom this wine takes its name. From the Salento vineyards located at 40 m above sea level and planted on clay-sandy soils, the bunches are harvested in the second half of October, after natural wilting in the plant. The dried grapes are then subjected to soft pressing, followed by partial fermentation in barriques which gives the wine a natural sweetness. Aging takes place in barriques Troncais and Never for 4 months.

Characteristics of this Passito della Puglia

It has a bright golden color with amber reflections. The olfactory profile gives notes of honey, citrus, apricot and spices. On the palate it is soft, velvety and with a long and persistent finish with hints of dried fruit and honey.

Recommended pairings with this Salento wine 

Try dry pastry, cream desserts, fruit tarts. Also excellent with blue cheeses. Serve at 12°C.
