The leaves that take care of the grapes. In Capofaro the sun shines and it is hot. The leaves here are fundamental for the protections of the fruits and for the preservation of the aromaticity. After the harvest, the grapes rest in a fresh and dry place to reach the right dehydration. A wine that is full of perfumes is created, dense, but never sickening thank to its sourness. It is produced with Malvasia variety, cultivated in Capofaro in Salina estate, on Eolie islands. The grapes are dried on trellis. The fermentation, that lasts 25 days, is managed in steel containers at a controlled temperature of 16°C. The aging is developed in steel for 6 months and in the bottle for further 4 months.

Intense yellow colour with gold reflections. The scent is intense and aromatic, with hints of apricot, raisin, candied fruits, lily of the valley, spices, black pepper and citronella. Its taste is characterized by sweetness and sourness in a perfect balance. It is a fresh wine, with a long persistence and a final that recalls citrus fruits.

Perfect with starters, raw fish, crustaceans, seafood, fried food and cheese. It has to be served at 2°C in a high, wide wine glass where the perfumes are exalted.
