This mainstay of the wine and food tradition of the Trentino is the masterpiece of the Santa Margherita product from Trentino and it is honored by the DOC certification. The traditional white vinification starts with the soft pressing of the grapes, followed by a short cold maceration and fermentation in stainless steel tanks for 8-10 days at 16-18°C. This process gives a fresh and fragrant wine which has to age on yeasts for some weeks and then is prepared to be bottled. This wine is produced by 100% Gewurztraminer grapes coming from Trentino. The vines are cultivated at 300-500 meters above the sea level and the soil has morainic and fluvial origins medium-bodied. The cultivation method is the Trento trellised method with spurred cordon with a density of 3000-6000 trees for hectare. This wine can be aged for 2-3 years.
Characteristics of the Gewurztraminer Trentino DOC wine
