From the vinification in blend of grapes of Corvina, Rondinella, Molinara, imposed by the strict disciplinary, the Zonin winery, famous all over the world, produces this sensational red wine of the peasant tradition of Veneto. The area of origin of the vineyards from which the precious grapes are harvested is the classic DOC of Veneto. For the vinification is followed the method according to the traditional technique of Ripasso which consists in the passage of Valpolicella wine on the pomace of Amarone just pressed. This technique slightly increases the alcohol content and enriches the wine with sugars, glycerin, polyphenolic substances and aromatic notes. The wine ages for 12 months in Slavonian oak barrels of 30 hectoliters and for 6 months in bottle.
Characteristics of this Valpolicella Classico Doc
The appearance of the wine is pale and luminous straw yellow, well supported by a very thin and fine perlage. The aroma is broad and complex, with vinous tones and well-defined notes of cherry and cocoa powder. The taste is fine and well structured. The aftertaste pleasantly fruity with light spicy notes.
Recommended pairings tasting this red wine
The wine is full-bodied to savor with tasty first courses, baked pasta, the traditional pasta "de caval" (horse stew), boiled meats and cheeses of good seasoning. The optimal serving temperature is 18ºC in a large glass.
