The Valpolicella Classico DOC is a red wine from the winery Vaona Odino. And 'one of the most consummate wine in the region of Veneto, being particularly suitable for everyday use. The grapes that give life to this wine are harvested in the month of October. The grapes from which it takes life are: 40% Corvina, 30% Corvinone, 25% Rondinella, 5% Molinara. The grapes come from vineyards owned by the family Vaona located in the area of Valpolicella Classica. The winemaking involves fermentation for 8-10 days in constant contact with the skins, which takes place at the end of the racking and pressing. It is aged in stainless steel tanks for a period of about seven months, at the end of this process the wine is aged in the bottle for 2-3 months.
Characteristics of Valpolicella Classico wine
The wine has deep ruby. The scent is surprising amplitude and intensity blending notes of raspberry, pepper and ginger. The palate is well balanced with good acidity.
