The Spumante Metodo Classico Extra Brut Giulio F56 of Baia del Sole Winery is part of the "UnderWaterWines": it is a wine that provides a particular type of underwater aging following bottling. The bottles are immersed in water in special conditions that evaluate the capsule, the basket and the duration of the dive; in particular , underwater chanting takes place at 52 m depth in Cala degli Inglesi, located in the Marine Protected Area of Portofino. Water has a whole series of benefits that thus ensure a quality product: the currents generate a gentle sway of the product contained in the bottle that guarantees the harmony of the product; the depth in water allows the refinement in almost total absence of light; the depth of immersion creates a pressure from the outside towards the inside of the bottle; the temperature in deep water remains constant. In 2024 this Spumante was consecrated as the Best Italian Classic Method.
Characteristics of this Classic Method Sparkling Wine
It has a very intense golden color and a fine and persistent perlage. The olfactory bouquet is typical of Vermentino, yellow pulp fruit, exotic fruit and a slight hint of hydrocarbon. The palate is citrus and with notes of Mediterranean herbs.

Ideal as an aperitif, sushi and sashimi and in general with all fish dishes. Serve at 6-8 ºC.
