This is a wine with an high content of CO2 which makes it very sparkling. The CO2 comes from the natural fermentation by following the “Champenois method” where in a big tank suitable to resist to high pressures, it is put the wine together with the carbon dioxide. The sweetness of this wine can change a lot from more dry tastes which determines the “brut” epithet to a more sweet tastes which corresponds to the “doux” typology. The cuvée Ca’ delle Rose of the Massucco winery is produced with a blend of Chardonnay and Arneis Favorita grapes at 50%. The production area is Castagnito in the Roero and the vines are exposed at North-west and their annual profit is 100 quintals. There is a soft pressing, it follows a fermentation under temperature control with several batonnage in steel tanks. The second working process previews a re-fermentation in bottles by following the classical Champagne method.

It has an intense gold color with a clear, fine and constant perlage. The foam is fine and permanent. The fragrant and delicate yeast scent exalt the taste which is harmonic on the palate, fresh and pleasant. It is plenty of floral and fruity scents.

It has to be served at 8°C in flute wine glasses. It is perfect alone or in celebrations because it is perfect with fish courses especially cold or hot starters. It I perfect with grilled crustaceous and fish cooked au gratin.
