Cicinis is the hill terraced at the foot of Mount Calvary (Podgora) in the Gorizia Collio. The grapes, harvested at dawn, are pressed whole, with maximum delicacy. Then follows the alcoholic fermentation that takes place for 45% in cement tanks egg-shaped, exclusively dedicated to this wine, and for 55% in barriques and tonneaux. These will be the containers in which the Cicinis will dry up, enriching itself thanks to the permanence on the total lees, up to the preparation of wine for bottling. During these 10 months, the wine is aged at low temperatures, therefore not performing malolactic fermentation.
Sauvignon "CICINIS" DOC's features
"Cicinis" shows a bright green reflection, the same nuance of the aromas of sage, peppermint and boxwood that open the infinitely complex bouquet of this wine. A warm sensation of roasting and caramel enhances the citrus sensations, pink grapefruit and bergamot over all. The acidity is magnificent, perfectly harmonized in the wrapping structure. The finish is long and saline.
Suggested pairings tasting this product of Attems winery
It goes perfectly with dishes characterized by good fat content such as pork (sausages, ribs) and legume soups, cream of mushrooms and chicken cooked in a pan with vegetables. Serve at 12 oC in a glass not very wide.
