A sensational white wine from Cantina San Michele Appiano, from the vinification of pure Sauvignon grapes. This grape with intense and marked aromas has begun to be widely cultivated in Oltradige since the 80s. The stony and calcareous soils and the cool fallout winds at the foot of the Mendola massif favour the creation of a lively and expressive Sauvignon in the Lahn vineyards. Acidic freshness, delicate minerality and splendid sharpness make Sauvignon Fallwind a trendy white. The vineyards are located in Appiano Monte at an altitude of 480 maximum 550 meters above sea level. The exposure is towards South/East and the soils are limestone gravel structure, the form of breeding is the classic one in Guyot. The vinification involves fermentation and aging on the lees in steel until the end of February.
Characteristics of this Sauvignon
The wine has a bright, light yellow colour with slight green reflections. The aroma is broad and recalls the scents of pineapple, elderberry, gooseberry and honey. The taste is mineral, refreshing and balanced.

It is the South Tyrolean asparagus wine par excellence, but it goes wonderfully with the lighter dishes of Asian cuisine such as sushi or Thai chicken skewers with walnut sauce (saté) or even alpine specialties such as quail breasts on chanterelle tartare. The optimal serving temperature is 8 ºC in a high and tapered glass that allows the aromas to concentrate to the nose.
