The vinification of this traditional Trentino aromatic wine, vinified by the Kellerei Adrian winery, requires the use of only 100% Sauvignon grapes. The vinification involves a first phase of fermentation at controlled temperature in stainless steel containers; maturation on the lees for 6 months, partly in stainless steel barrels for 70% and partly in large wooden barrels for 30% of the product, then assembled and let the stainless steel tanks rest.
