The vinification of 70% Sangiovese grapes, 30% Cabernet Sauvignon. The origin is that of the product with grapes from vineyards of the estates of Cabreo located on the hills of Greve in Chianti. Vinification takes place in stainless steel tanks at a controlled temperature of 28ºC. Maceration on the skins for 18 days. The aging takes place in French oak barrels (225 litres) (30% new, 40% one year old, 30% two years old) for 18 months. The aging is at least 6 months in bottle.
Characteristics of this wine from Cantina Folonari
The appearance is intense in color reminiscent of a juice of blackberries. The bouquet is powerful with notes of cinchona, sour cherry and juniper wood, accompanied by undergrowth, finally opening towards spicy spices. The taste is full and rich in the mouth, fruity, intensely savory, in the finish of the mouth gives smoky and balsamic notes.
