This red wine from the Piedmontese Dante Rivetti winery is made from pure Nebbiolo grapes from south-southwest facing vineyards in the hills of the Barolo appellation. After the manual harvesting of the bunches, the traditional red winemaking process takes place: fermentation takes place in steel with a traditional reassembly system for approximately 15 days. The final aging phase requires a minimum 24-month break in barriques, of which 60% in French oak barrels and 40% in Slavonian oak barrels.
Characteristics of this Piedmont wine
It has a ruby red color with purple highlights. The olfactory notes are full, intense with hints of red fruits, vanilla and spices. On the palate it is soft,with a pleasantly tannic structure and a finish of licorice and tobacco.
Recommended pairings with this Dante Rivetti red wine
Excellent with red meat and game dishes: pasta with ragù, braised, stewed, cut beef. Also to try with aged cheeses. Serve at 17-18°C.
