Sordo is a synonym of tradition in Piedmont. Its Barbera d’ Alba DOC is produced with 100% Barbera grapes, cultivated in the area of Castiglione Falletto and Serralunga d’ Alba. The vineyards have a south-west exposition and are located 250-300 meters above the sea level. The soils here are mainly composed by sands and clay. The plants of the vineyard, that are between 15-25 years old, are trained on espaliers with the traditional Guyot method. 4500 units per hectare that produce around 80 quintals grapes. The wine making starts with the soft pressing and the elimination of stalks, followed by a long maceration that last 2 weeks. The fermentation is managed in steel containers at a controlled temperature of 28°C. The maturation, that lasts 6 months, is managed in steel too and it is followed a further aging of three months in the bottle.
