From the vinification in purity of Vermentino grapes. The production area is typical of the Mesa winery in the territory of Sulcis, in the south-west of Sardinia. The harvest takes place between the second and third ten days of September. The vinification foresees that the destemmed and pressed grapes are cooled up to 4 ºC and macerated for about 12 hours. Then the soft pressing and the subsequent cold natural decantation of the must. Fermentation is carried out with selected yeasts at 18,- 20,- C. At the end of fermentation the wine remains on the lees for 6 months. It is then aged in bottle for at least 2 months after bottling.
Characteristics of this Sardinian wine
The appearance of the wine has a golden yellow color but with a slight intensity. The bouquet has intense notes of ripe fruit and cooked apples, with a background of jasmine and other white flowers. The taste is soft and silky, defined by great flavor and long persistence.

Excellent with first courses with strong flavors, grilled or well seasoned fish, white meat, medium-aged cheeses. The optimal serving temperature is 10 ºC in a high and wide glass.
