The "Camartina" from the Tuscan winery Querciabella is produced with 70% Cabernet Sauvignon grapes and the remaining Sangiovese, grown in organic and biodynamic agriculture. After the manual harvest, the bunches are pressed and left to ferment separately in wooden vats. The maceration in contact with the skins lasts 12 days for the Sangiovese and up to 20 for the Cabernet. It ages for a year in barrique and is subsequently bottled and further refined in glass for 6 months before being put on the market.
